Las Lajas is equipped with a state of the art micro mill which allows Oscar Chacon to experiment with fermentation. This infrastructure allows Chacon to process coffee in different and innovative ways and so to develop consistently unique flavours. Chacon has branded the unique honey process of this coffee Black Diamond. The specifics of the process remain a family secret. Three generations of the Chacon family have farmed the slopes of the Poas Volcano in Alajuela. The fertile volcanic soils are the basis of their high quality coffee. The Chacons’ are pioneers in organic and sustainable production and they are certified by the Organic Food Federation.
