Tumbaga is a high quality sugarcane decaffeinated coffee from Colombia with a cocoa-rich body underpinning sweet flavours of apricot and honey. Sugarcane Decaffeination is a natural way of removing caffeine from coffee whilst retaining flavour. The process uses natural spring water and natural Ethyl Acetate sourced from fermented sugarcane in the southern region of Palmira, Colombia. Ethyl Acetate is an organic byproduct of fermentation and can also be found in ripe bananas and beer. Decaffeination begins with steaming the coffee to increase it’s porosity. The beans are then submerged in an Ethyl Acetate solution until 97% of the caffeine is removed. This is a sweet, balanced and flavourful cup - the only thing missing is the caffeine.
