In speciality coffee there is often an emphasis on fresh crops, and for good reason. There are few things we look forward to more in the roastery than getting our first taste of some new Rwandans or Colombians. But this focus on fresh crop coffees means we can often overlook past crop coffees when for our single origin range. A past crop coffee is usually over a year old and although a lot of coffee will begin show signs of ageing and start to lose some of its vibrancy, there are some coffees that can age remarkably well and taste just as good as their fresh crop counterparts. This Washed Ethiopian is one of those coffees. With notes of sticky, juicy fruits like honeydew melon and peach alongside classic Ethiopian florals, this crop brings brightness and complexity to our current Seasonal Blend but we felt it should be allowed to shine as a delicious single origin, too.
